Produce, Preserve, and Prepare Your Harvest

 

 

So, what have you been preserving lately?

Do you grind your own flour?

Have you hopped on the Homesteading Wagon yet?

I love going from Farm to Table, but I really enjoying preserving my harvest!  Right now, I have all kinds of stuff growing in my garden.  Everything should be ready for pickin’ in the next month or so!  It’s FALL here in Florida. 🙂

I can’t wait to start making some of my garlic dill pickles!  My vines are growing quite nicely so it won’t be long now!  My friend Hope and I bought this ridiculous amount of mason jars a few years ago from a lady for $60.  I think I had a total at one time of 250.  I have them organized in my garage and whenever we get free time then we will get to canning.  There’s a huge variety of regular, wide mouth, wired, pint, quart, lids, etc.  We were blessed when we found these!

 

The one thing I do have my eye on for this year’s purchase is a food mill.  Do you have one already?  I’ve got my eye on this one right here….

A friend of mine has one and if you have never tasted fresh ground flour, well, then you are missing out!  It literally took us 1 minute to grind the flour.  Crazy!

I can’t wait to get mine so I can start grinding my own.  The whole Gluten-Free epidemic is so bad because all of the commercial flour is tainted with chemicals during their process.  My grandpa made bread all the time and I don’t ever remembering either of my grandparents having food allergies.

If you have a mill already, which one do you have?  Is it manual crank or electric?  How often do you use it?

Slowing Down while Blogging Through the Bible

Are you still blogging with me? I sure hope so…..

Taking time out of our day to spend with The Lord is so important.

We’re all busy. Actually, we are way too busy! I get it, I really do. Get up in the morning and rush around to get the kids taken care of. You either rush them out the door to school or you prepare your curriculum for those that are home-schooled. You then go to work, run errands, taxi kids around to different sports, go to meetings, blow through a drive-thru for dinner or quickly try to throw something together last minute. Finally, after you get the kids in bed and finish up with any homework, then it’s your turn.

So, now 11pm rolls around and you finally climb into bed, but guess what? You are so wired and tired that you can’t fall asleep right away! WOW, does anyone ever have those kind of days?

I sure USED to. Yes, there was a time in my life where I did all the above. I realized about four years ago that none of it matters if I am doing it fore all the wrong reasons.  This is where my family and I started to slow down.  I don’t run around int he evenings taking my kids here and there.  We do things as a family and of course, we are highly involved in 4-H and our church.

God desires for us to spend time with him. I now get up an hour or so before everyone else and fix my cup of tea and grab my bible. That is my time with God. Right now I have been going on the back porch in the mornings as it’s been so nice and cool in the mornings.

“Blessed is the man who walks not in the counsel of the wicked, nor stands in the way of the sinners, nor sits in the seat of the scoffers; but his delight is in the law of the Lord, and on his law he meditates day and night.” (Psalms 1″1-2)

 

As you are reading this week, ponder on what you have learned this week.  How can you make changes in your daily schedule to have more time with God?  He longs to have a relationship with you!!!

Give him your best right when you wake up, not your leftovers when you get home!  I am living proof that it will determined what kind of a day you are going to have!  Just try it and see how you will tackle those “sticky situations” that arise when you least expect it!

Cooler Weather and Aunt Linda’s Pumpkin Bread

My kitchen smells amazing!  Just like I long for all year long!!!

There’s nothing like the smell of my Aunt Linda’s Pumpkin Bread and the weather has actually started to cool off here in Florida.  It can’t get any better than this!

I LOVE my Aunt Linda.  She’s more like a mom to me than an aunt.  We are so much alike that I wished we lived closer to one another.  I treasure the time I get with her every time I go visit her in North Carolina.

Fall doesn’t start until I make her pumpkin bread.  Really, it doesn’t.  I’ve tweaked her recipe just a little bit to fit with some of my baking criteria.  I love this recipe because I literally just put everything in the mixer bowl and start it.  It’s that easy.  It may take roughly 15 minutes for prep.  Ridiculous when you get this much yumminess!

Here’s the recipe:

Aunt Linda's Pumpkin Bread

  • Servings: 6-8 slices
  • Difficulty: easy
  • Print

3 1/2 cups of unbleached flour

2 2/3 cup of coconut sugar

1 1/2 tsp. of salt

1/2 tsp. of baking powder

2 tsp. of baking soda

4 eggs

2 tsp. of cinnamon

1 tsp. of cloves

1 tsp. of nutmeg

2 cans of organic pumpkin

2/3 cups of coconut oil

2/3 cups of water

1 cup of pumpkin seeds

Directions:

Place all ingredients in bowl and mix thoroughly.  Pour into a greased pan and bake at 350 degrees for an hour.

*I replaced the sugar with coconut sugar and the oil with coconut oil.  I also added pumpkin seeds instead of walnuts (what her recipe calls for).

Unbleached flour is the way to go or better yet, get your own grains and a mill and grind your own. I recommend buying from Pantry Paratus.

Into the oven they go!

Once cooled, wrap them in foil and place in freezer.  They are great for taking to a sick friend or I am taking one to my good friend Annette so they can have something yummy for breakfast tomorrow.

If you are like me, you will slice a piece right when it comes out of the oven.  I know, I am bad, but if you don’t then Aunt Linda might get mad! 🙂

How Well Does Your Garden Grow?

I know I’ve said it before, but I just really love this time of year!  Living in Florida, we get an extra growing season.  I just planted a few weeks ago my Fall crop – you can read about it here.

It’s pretty exciting when you start seeing your seedlings start to pop up!  Again, here in Florida, we don’t have to worry with all the snow and cold weather, so we can just plant directly in the ground, unless it’s January – March.  It does actually get to freezing point here in those months, so you just have to be aware if you are planting.

So, what did you plant this Fall?  I’ve got my garden spread out into several areas and it’s big enough to feed the four of us in my family.

On my list this year, I planted: Corn, Blue Lake Green Beans, Acorn and Spaghetti Squash; Daikon Radish, Green and Jalapeno Peppers, Okra, Red and Yellow Onions, Collards, Kale and Kohlrabi; Texas Creamers, Black eyed Peas and a Cowboy Bean that those darn bunnies keep eating.

I also have a few tomato plants and basil growing.  I’ll keep you updated as everything starts to grow!

It’s not too late to start your fall garden.  Just grab your Farmer’s Almanac and a shovel and get to work!
